TUNA IS THE MOST USED SEAFOOD AT SUSHI MON.
Large tuna with high oil content make for a delicious dish. The tuna caught by BC fishermen is albacore tuna. North Pacific Albacore is a younger tuna and does not have the mercury content that other, longer lived tuna has. Canadian Albacore is sustainably harvested and receives a green listing from the Monterey Bay Aquarium's seafood guide. To see the guide, click here. Sushi-Mon carefully chooses which fishermen they buy their seafood from. Steve Watson supplies the tuna for Sushi-Mon this year. Steve is meticulous when it comes to freshness and quality. His vessel is the Rainbow Isle. See a picture of Steve and his boat in our fishing gallery here and read more about Canadian albacore here.
