WOW! What a season it has been so far!! Mount Washington has the most snow and the most wonderful people ski there and eat at Sushi-Mon
Sushi-Mon Recipe 
Bison Tataki: (New evening menu item)
Tataki is a typical Japanese preparation in which beef or fish is seared on the outside, left very rare inside, thinly sliced and served with a citrus soy sauce (ponzu).
- Bison tenderloin (room temperature) 1 pound
- Green onion (finely chopped) 1/2 cup
- Canola oil 2 Tablespoons
- Black Pepper 2 Tablespoons
- Sake 2 Tablespoons
- Mirin 2 Tablespoons
- Soy Sauce 2 Tablespoons
- Rice Vinegar 2 Tablespoons
- Juice of 1/2 Orange
Juice of 1/2 Lemon
METHOD:
Ponzu Sauce
Combine 5,6,7,8,9. Can be refrigerated up to 2 weeks
Tataki
- Rub black pepper on tenderloin.
- In a pan , heat canola oil to medium high.
- Sear Bison for 2 min. on each side, cover and set aside for 5 min.
- Using a very sharp knife, slice Bison in 1/4 inch pieces and fan on a plate
- Top with green onions and drizzle 1/2 of the ponzu sauce on top and place remaining sauce in a small bowl for dipping the Bison slices.
Serve with rice and organic greens; Serves 4
